Why this works

A hearty, energy-dense side dish with moderate protein and fibre, but relatively high saturated fat and sodium from the cheese, margarine and added salt.

Potassium from potatoes. Potatoes contribute potassium, which supports normal blood pressure and muscle function.

Calcium and protein from cheddar. Mature cheddar provides useful calcium and protein, though it also adds significant saturated fat and salt.

Sodium concern. The added salt plus cheddar make this dish relatively high in sodium, which may not suit a frequent everyday choice.

Method

  1. Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and grease a baking dish with margarine.
  2. Thinly slice the potatoes and brown onions.
  3. Layer the potatoes and onions in the dish, seasoning each layer with salt and black pepper.
  4. Dot a little margarine over the top, then scatter over the mature cheddar cheese.
  5. Bake for 60-70 minutes until the potatoes are tender and the top is golden and bubbling.
