Why this works

A rich, savoury melt that is high in protein but also high in saturated fat and sodium, so best enjoyed as an occasional treat rather than an everyday meal.

Protein from bacon and cheese. Provides a useful protein hit per serving, which supports satiety and muscle maintenance.

High saturated fat. Extra mature cheese, bacon and butter contribute a relatively high saturated fat content, which can be less favourable for heart health if eaten often.

Sodium is fairly high. Bacon and mature cheese make this dish notably salty, so it may not suit a low-salt eating plan.

Method

  1. Cook the bacon in a frying pan until crisp, then set aside.
  2. Soften the sliced orange pepper in the bacon fat for 3-4 minutes.
  3. Mix the bacon, pepper and grated extra mature cheese together.
  4. Butter the outside of two slices of bread if using, then assemble the filling between the slices.
  5. Toast in a sandwich press or fry in a pan until golden and the cheese has melted.
  6. Serve hot.
