Why this works

A protein-rich, relatively low-carbohydrate meal with moderate fat and sodium, making it satisfying but not especially low salt.

High-quality protein. Chicken breasts and eggs provide substantial complete protein to support muscle maintenance and satiety.

Vitamin C and antioxidants. Red and green peppers, plus tomatoes, contribute vitamin C and carotenoids, which support immune function and overall antioxidant intake.

Sodium consideration. Peri peri chicken is often seasoned or marinated, so sodium may be moderate to high depending on the product used.

Method

  1. Dice the red pepper, green pepper and tomatoes.
  2. Cut the peri peri chicken breast into small strips.
  3. Cook the chicken in a frying pan over medium heat until heated through and lightly browned.
  4. Add the peppers and tomatoes and cook for 6-8 minutes until softened.
  5. Push the mixture to the sides of the pan and crack in the eggs.
  6. Fry until the whites are set and the yolks are cooked to your liking.
  7. Serve straight away.
