Why this works

A high-protein, relatively low-carbohydrate skillet meal with moderate calories; nutrient-dense, though sodium may be noticeable depending on the peri-peri seasoning used.

Lean protein. Chicken breast and eggs provide a substantial amount of complete protein, supporting muscle repair and satiety.

Vitamin C and antioxidants. Red and green peppers, plus tomatoes, contribute vitamin C and carotenoids such as lycopene, which support immune and cell health.

Sodium caution. Peri-peri chicken can be seasoned quite heavily, so sodium may be moderate to high depending on the product or marinade used.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Slice the peri peri chicken breast into chunks and dice the red pepper and green pepper.
  3. Halve the tomatoes.
  4. Add the chicken, peppers and tomatoes to an ovenproof skillet and cook on the hob for 5 minutes, stirring occasionally.
  5. Transfer to the oven and roast for 10 minutes until the tomatoes are soft and juicy.
  6. Make 2 wells in the mixture and crack in the eggs.
  7. Bake for 6-8 minutes until the eggs are just set, then serve hot.
