Why this works

A relatively lean, high-protein stir fry with moderate carbohydrate and low saturated fat, but the soy sauce and soft drink add some sodium and sugar.

Vitamin C and antioxidants. Broccoli, red pepper, garlic and ginger provide vitamin C and plant compounds that support immune function and overall antioxidant intake.

Lean protein. Chicken breast is a high-quality protein source that supports muscle maintenance and satiety with relatively low fat.

Sodium and sugar note. Soy sauce contributes significant sodium, and the soft drink adds free sugars, making this less ideal for low-sodium or low-sugar diets.

Method

  1. Slice the chicken breast and vegetables into thin strips.

Cut the chicken against the grain into even strips so it stays tender, and keep the vegetables similar in size so they finish at the same pace. If any pieces are much thicker, they will lag behind and leave the stir-fry uneven.

  2. Heat a wok over a high heat and stir-fry the chicken for 4-5 minutes until nearly cooked.

Let the wok get properly hot before the chicken goes in; it should sizzle instantly rather than sit and stew. Keep the chicken moving so it browns at the edges without releasing too much juice into the pan.

  3. Add the broccoli, red pepper, carrot, ginger and garlic, then cook for 3-4 minutes more.

Add the broccoli first if the florets are large, then the softer vegetables a moment later so nothing turns mushy. The ginger and garlic should become fragrant within seconds; if they start to darken quickly, the heat is too fierce.

  4. Pour in the soy sauce and soft drink, then toss for 2-3 minutes until the sauce lightly coats everything.

Pour the liquid around the sides of the wok so it hits the hot metal and lifts up any tasty browned bits. Reduce the heat a touch if the sauce begins to boil aggressively, as you want a glossy coat rather than a thin, watery finish.

  5. Serve immediately with rice or noodles.

Have the rice or noodles ready before the final toss, because the sauce thickens quickly as it cools. Serve while the vegetables still have a crisp bite and the chicken is just juicy, not dry.
