Why this works

A high-protein, moderately low-carbohydrate dish with plenty of vegetables, but with moderate sodium and fat depending on the peri peri seasoning used.

High-quality protein. Chicken and eggs provide a substantial amount of complete protein, supporting muscle repair and satiety.

Vitamin C and antioxidants. Red and green peppers plus tomatoes contribute vitamin C, carotenoids and other antioxidants.

Sodium to watch. Peri peri seasoning and processed chicken breasts can push sodium higher than a home-made tomato-and-egg dish.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Use an oven thermometer if you can, as fan ovens can run hot or cool; give the oven a full 10 minutes to stabilise so the chicken starts cooking evenly rather than steaming.

  2. Dice the red pepper and green pepper, then chop the tomatoes.

Cut the peppers into roughly even dice so they soften at the same rate, and keep the tomato pieces slightly chunky to help them break down into a thicker sauce instead of disappearing completely.

  3. Slice the peri peri chicken breast into bite-sized pieces.

Aim for bite-sized pieces about 2–3 cm across, as anything smaller can dry out quickly in the oven while larger pieces may not pick up enough colour.

  4. Place the chicken, peppers and tomatoes in a shallow ovenproof dish.

Spread everything in a single layer rather than piling it up, which helps the tomatoes release juice and the peppers roast instead of stew.

  5. Bake for 15 minutes, stirring once, until the tomatoes have softened and created a saucy base.

Stir once only when the edges look a little caramelised and the tomatoes have started to collapse, so you keep some texture and do not mash the mixture into a puree.

  6. Make 4 small wells in the mixture and crack in the eggs.

Press each well down with the back of a spoon deep enough to cradle the egg white, which helps stop it spreading too thinly into the sauce.

  7. Bake for another 8-10 minutes until the eggs are set to your liking.

Watch for the whites to turn opaque and just set while the yolks still wobble slightly; if you prefer firmer eggs, leave them in for the full time but avoid overbaking once the surface starts to look rubbery.

  8. Serve immediately.

Let the dish stand for a minute or two before serving so the eggs settle and the sauce thickens slightly, which makes it easier to spoon without the yolks breaking immediately.
