Why this works
A moderate-calorie dessert with some antioxidant-rich fruit, but fairly high in sugar and refined carbohydrate relative to fibre.
Berry antioxidants. Fresh berries provide vitamin C and polyphenols, which support antioxidant intake and add some fibre.
Egg nutrients. Eggs contribute protein, vitamin B12 and choline, though the amount per serving is modest.
Sugar content. Honey adds free sugars, so this dessert is not particularly blood sugar friendly despite the fruit content.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a baking tray with baking paper.
- Make a simple pastry by mixing the flour with a pinch of salt, then rubbing in cold butter if available until it resembles breadcrumbs; add a little cold water just until it comes together, then shape into a disc and chill for 15 minutes.
- In a bowl, lightly beat the eggs and stir in the fresh berries with half the honey, keeping a few berries back for the top if you like.
- Roll the pastry out roughly into a circle on a lightly floured surface and transfer it to the lined tray.
- Pile the berry mixture into the centre, leaving a wide border, then fold the pastry edges up and over the fruit in rustic pleats.
- Brush the pastry with a little beaten egg, then bake for 25-30 minutes until golden and the berries are bubbling.
- Warm the remaining honey briefly, then drizzle it over the galette before serving.
