Why this works

A moderate-calorie sweet flatbread with some fruit benefits, but it is relatively high in sugar and refined carbohydrate.

Fresh berries. Provide vitamin C, polyphenol antioxidants and a modest amount of fibre, which support immune and gut health.

Olive oil. Adds mostly unsaturated fats, including heart-friendly monounsaturated fat.

Sugar and refined flour. Most carbohydrates come from flour and honey, so this dish is less suitable for blood sugar control than a wholegrain, lower-sugar option.

Method

  1. Put the flour into a bowl and whisk the eggs with 120ml water in a jug if using, then mix into the flour with the olive oil and a pinch of salt to form a soft dough.
  2. Knead briefly until smooth, then divide into 4 equal pieces and roll each one out into a thin round flatbread.
  3. Heat a frying pan over a medium heat and cook each flatbread for 1-2 minutes on each side until lightly golden and cooked through.
  4. Stir the fresh berries with the honey in a bowl so they become glossy and lightly syrupy.
  5. Serve the warm flatbreads topped with the berry mixture and an extra drizzle of honey. If you like, brush the flatbreads with a little beaten egg before cooking for a more golden finish.
