Why this works

A moderate-energy breakfast or brunch dish with useful protein, but fairly high in carbohydrate and sugar from bread, milk and honey.

Protein from eggs and milk. Eggs and milk provide good-quality protein, which supports satiety and muscle repair.

Micronutrients from berries. Fresh berries contribute vitamin C and polyphenol antioxidants, with some fibre from the fruit.

Watch the sugar load. Honey raises the free sugar content, so this dish is less suitable if you are trying to keep blood sugar stable.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly grease a small baking dish.
  2. Whisk the eggs and milk together in a bowl until well combined.
  3. Cut the bread into thick slices or large chunks and arrange in the baking dish.
  4. Pour the egg mixture over the bread, pressing down gently so it soaks up the custard.
  5. Scatter the fresh berries over the top, then drizzle with half the honey.
  6. Bake for 20-25 minutes, until puffed, golden and just set in the middle.
  7. Drizzle with the remaining honey and serve warm.
