Why this works

A high-protein, relatively low-carbohydrate meal with moderate calories; good for satiety and muscle maintenance, but the peri peri chicken likely pushes sodium up.

High-quality protein. Chicken and eggs provide a substantial dose of complete protein, supporting muscle repair and helping keep you full.

Vitamin C and antioxidants. Red and green peppers, plus tomatoes, contribute vitamin C and carotenoids, which support immune function and healthy skin.

Sodium consideration. Peri peri chicken can be relatively salty, so this dish may be less suitable for those watching blood pressure or overall sodium intake.

Method

  1. Dice the red pepper, green pepper and tomatoes.

Aim for evenly sized dice so the peppers soften at the same rate as the tomatoes; keep the pieces small enough to fit neatly through the omelette.

  2. Slice the peri peri chicken breast into thin strips.

Cut across the grain into slender strips so the chicken stays tender rather than chewy, and keep the slices uniform for even warming.

  3. Warm the chicken, peppers and tomatoes in a frying pan for 4-5 minutes until the tomatoes begin to break down.

Use a medium heat so the vegetables soften without catching, and stop as soon as the tomatoes look glossy and start to slump into a saucy texture.

  4. Beat the eggs in a bowl.

Whisk until the yolks and whites are fully combined and slightly frothy, which helps the omelette set evenly without streaks.

  5. Pour the eggs into the pan and swirl to form an even omelette.

Tilt the pan quickly to cover the base in a thin layer, then leave it undisturbed for a moment so the egg can start to set before moving.

  6. Cook gently until set underneath, then fold and cook for another minute.

Lower the heat if the base colours too fast, and fold once the top is still faintly wet so the centre stays soft rather than dry.

  7. Slide onto a plate and serve immediately.

Serve straight away while the omelette is still steaming, as it can turn rubbery if left in the pan even for a minute or two.
