Why this works
A very energy-dense, refined-carbohydrate fritter batter that is high in fat and sodium and low in protein and fibre.
High sodium from added salt. 1 tsp salt across the recipe contributes a substantial sodium load per serving, which may be unsuitable for those monitoring blood pressure.
Refined flour and sugar. Plain flour and caster sugar provide quick-digesting carbohydrate with very little fibre, vitamins or minerals.
Oil increases energy and fat. The 4 tbsp of cooking oil significantly raises the calorie content and total fat per portion.
Method
- Empty the green packet, brown packet, yellow packet and dark grey packet into a bowl and combine them well; for a practical fritter batter, treat these as plain flour, caster sugar, salt and black pepper.
- Add the water gradually, stirring until you have a thick, spoonable batter with no dry pockets.
- Heat a shallow layer of plain cooking oil in a frying pan over a medium heat.
- Drop spoonfuls of the batter into the hot oil and press them lightly to flatten.
- Fry for 2–3 minutes on each side until crisp and golden brown.
- Lift out the fritters and drain briefly on kitchen paper before serving hot.
