Why this works

A protein-rich, fairly energy-dense dish with modest carbohydrates, but it is higher in saturated fat and salt due to the cheese and added salt.

Protein and B vitamins. Eggs and cheese provide high-quality protein, plus B vitamins such as B12, which support muscle maintenance and energy metabolism.

Calcium source. Cheese and yoghurt contribute calcium, which is important for bone health.

Vegetable hydration, but low fibre. Cucumber adds fluid and a little vitamin K, but the overall fibre content is low unless served with extra vegetables or wholegrains.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a tray with baking paper.
  2. Grate the cucumber and squeeze out as much liquid as possible.
  3. Whisk the eggs with the yoghurt, then stir in the cucumber and grated cheese.
  4. Season with salt and black pepper, then spoon small rounds onto the tray.
  5. Bake for 12-15 minutes until set and lightly golden, then serve warm.
