Why this works

A moderately energy-dense sweet pancake dish, providing quick-release carbohydrate with some fat, but relatively low in protein and fibre.

Potassium from bananas. Bananas contribute potassium, which supports normal muscle and nerve function.

Refined carbohydrate content. Most of the carbohydrate comes from flour and added sugar, so this dish may raise blood glucose more quickly than a higher-fibre breakfast.

Saturated fat from butter and margarine. The spread fats add saturated fat, which is worth moderating if following a heart-healthier diet.

Method

  1. Whisk the flour with 2 tbsp sugar in a bowl.

Sift the flour first if it looks clumpy, then whisk until the sugar is evenly dispersed and the mixture looks pale and uniform. This helps prevent sweet pockets and gives a lighter batter.

  2. Mash 2 bananas and mix them with 2 eggs and 250 ml milk if available; if not, use water to loosen the batter.

Mash the bananas very thoroughly so there are no large lumps, then add the eggs and milk gradually to stop the mixture turning watery at the start. If using water, add it a little at a time until the batter falls from a spoon in a thick ribbon rather than pouring like milk.

  3. Stir the banana mixture into the flour until you have a smooth batter.

Fold just until the flour disappears, because overmixing will make the pancakes tough rather than tender. A few tiny lumps are fine, but the batter should look glossy and evenly speckled with banana.

  4. Heat a little butter or margarine in a frying pan and cook spoonfuls of batter for 2-3 minutes each side.

Keep the pan over medium heat so the fat shimmers but does not smoke, otherwise the pancakes will brown too quickly before the middle sets. Wait until small bubbles appear on the surface and the edges look slightly dry before turning.

  5. Mix the Nescafé Cappuccino with a splash of hot water and a little sugar to make a drizzle, then spoon it over the pancakes before serving.

Use only enough hot water to dissolve the sachet into a smooth, glossy sauce; if it is too thin, it will run straight off the pancakes. Drizzle while warm, not boiling hot, so the flavour stays creamy rather than harshly bitter.
