Why this works

Moderate-energy muffin with mostly carbohydrate from flour, oats and banana, plus a moderate amount of saturated fat from butter and margarine.

Wholegrain content. Oats and the extra Quaker oats contribute some fibre and beta-glucan, which can support fullness and healthy cholesterol levels.

Potassium from bananas. Bananas provide potassium, which helps with normal muscle and nerve function and contributes to overall electrolyte balance.

Saturated fat and sugar. Butter, margarine and added sugar raise the saturated fat and free sugar content, so these muffins are best as an occasional snack rather than an everyday staple.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and line a muffin tin with cases.
  2. Mix the flour, oats and Quaker with the sugar in a large bowl.
  3. Mash the bananas and stir them together with melted butter or margarine.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter between the cases and bake for 16-18 minutes until risen and golden.
  6. Leave to cool slightly before serving.
