Why this works

A protein-rich, fairly low-carbohydrate egg salad, but the olive paste and pickles make it relatively salty for the portion size.

High-quality protein. Eggs provide complete protein, supporting muscle maintenance and satiety.

Source of vitamin B12 and choline. Eggs are a good source of B12 and choline, both important for nerve function and healthy red blood cells.

Sodium from savoury add-ins. Pickles and olive paste can push the sodium content up, so this dish may not suit a low-salt diet in larger portions.

Method

  1. Boil the eggs for 9-10 minutes, then cool them under cold water and peel them.
  2. Chop the eggs roughly and place them in a bowl.
  3. Stir in the yoghurt, olive paste and finely chopped pickles until combined.
  4. Taste and adjust the balance with a little more yoghurt if you want it creamier.
  5. Serve chilled or at room temperature.
