Why this works

A rich, savoury quiche that is high in protein but also high in saturated fat and salt, so best enjoyed as an occasional meal rather than an everyday choice.

Protein from eggs, ham and cheese. Provides a useful amount of protein per serving, supporting satiety and muscle maintenance.

Calcium from cheddar and milk. Cheddar and milk contribute calcium for bone health, though the saturated fat content is also relatively high.

High salt content. The ham, cheddar and added salt make this dish notably high in sodium, which may not suit those watching blood pressure.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5). Lightly grease a 23 cm tart tin with the butter.
  2. If using ready-made pastry, line the tin and chill for 15 minutes. Blind bake the pastry case until lightly golden, then remove any baking beans and set aside.
  3. Scatter the ham and cheese evenly over the base of the pastry case.
  4. In a jug, whisk together the eggs and milk with a little salt and black pepper if using.
  5. Carefully pour the egg mixture over the ham and cheese.
  6. Bake for 30–35 minutes, until the quiche is just set with a slight wobble in the centre and the top is lightly golden.
  7. Leave to stand for 10 minutes before slicing and serving warm or at room temperature.
