Why this works
Moderate-protein savoury muffin with substantial saturated fat and sodium from cheese, ham and added salt.
Calcium. Cheddar, yoghurt and milk contribute calcium for bone health.
Protein. Eggs, ham, cheese and yoghurt provide a useful amount of protein per serving.
Sodium concern. Added salt plus ham and cheddar make this a fairly salty dish, so it may not suit low-sodium diets.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and lightly grease a 6-hole muffin tin with a little butter.
- In a large bowl, mix the plain flour, baking powder, salt and black pepper.
- In a separate bowl, whisk together the eggs, yoghurt and milk, then stir in the melted butter.
- Fold the wet ingredients into the dry ingredients until just combined, then mix through the diced ham and grated cheese.
- Divide the batter evenly between the muffin holes and bake for 15-18 minutes, until risen and golden.
- Leave to cool for a few minutes in the tin, then turn out and serve warm.
