Why this works

A protein-rich, filling omelette that is relatively high in saturated fat and sodium, mainly from the cheddar, ham and butter.

High-quality protein. Eggs, ham and cheddar provide a substantial amount of protein, which supports satiety and muscle maintenance.

Calcium and vitamin B12. Cheddar and eggs contribute calcium for bone health and vitamin B12 for red blood cell formation and nervous system function.

Salt and saturated fat. Ham and cheddar are the main sources of sodium and saturated fat, so this dish may be less suitable for those watching blood pressure or heart health.

Method

  1. Finely chop the red onion and parsley, and dice the ham.
  2. Crack the eggs into a bowl, add the milk, and whisk until smooth. Season with salt and black pepper if using.
  3. Melt the butter in a non-stick frying pan over a medium heat, then soften the red onion for 2-3 minutes.
  4. Add the ham and cook for 1 minute, then pour in the egg mixture.
  5. Cook gently, tilting the pan so the eggs set evenly, until the base is just set but the top is still slightly soft.
  6. Scatter the cheddar cheese and parsley over one half of the omelette, then fold it over and cook for another minute until the cheese melts.
  7. Slide onto a warm plate and serve immediately.
