Why this works

Rich, energy-dense breakfast bowl with substantial protein and calcium, but high in saturated fat and relatively low in fibre.

High-quality protein. Eggs and mozzarella provide a solid protein base to support fullness and muscle maintenance.

Calcium source. Mozzarella and cream cheese contribute calcium, which supports bone health, though the dish is also high in saturated fat.

Vitamin C and antioxidants. Red bell pepper adds vitamin C and carotenoids, helping boost micronutrient intake despite the dish's creamy profile.

Method

  1. Melt the butter in a non-stick frying pan over a medium heat.
  2. Add the red bell pepper and cook for 4–5 minutes until softened and lightly caramelised.
  3. In a bowl, beat the eggs, then pour them into the pan and stir gently until just set.
  4. Reduce the heat and fold through the cream cheese so it melts into the eggs.
  5. Scatter over the mozzarella cheese and let it soften for 1 minute.
  6. Spoon the egg mixture into bowls and top with hot salsa dip before serving.
