Why this works

Protein-rich and very low in carbohydrate, but relatively high in saturated fat and energy due to the cheese and butter.

High-quality protein. Eggs and cheese provide complete protein, which supports muscle maintenance and satiety.

Calcium source. Cheese contributes calcium for bone health, though the amount of saturated fat is also notable.

Very low carbohydrate. This dish is naturally low in carbs and sugar, which may suit lower-carb eating patterns.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a 6-hole muffin tin with a little butter.
  2. Melt the butter, then leave it to cool slightly.
  3. In a bowl, whisk the eggs until smooth, then stir in the melted butter and the cheese.
  4. Spoon the mixture evenly into the muffin tin, filling each hole about three-quarters full.
  5. Bake for 18-20 minutes, until the muffins are risen, golden, and just set in the middle.
  6. Leave to cool for 5 minutes before turning out and serving warm.
