Why this works

A light, protein-rich dish with relatively low carbohydrate and saturated fat content, though sodium can vary depending on the salsa and hot sauce used.

Protein from eggs. Eggs provide high-quality protein and key nutrients such as vitamin B12 and choline, supporting muscle maintenance and normal nerve function.

Folate, iron and vitamin K. Spinach contributes folate, iron and vitamin K, which are important for red blood cell formation, oxygen transport and blood clotting.

Sodium may be moderate. Salsa and hot sauce can add a notable amount of salt, so sodium may be higher if shop-bought versions are used.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Let the oven fully come up to temperature before you start assembling, so the eggs begin cooking straight away rather than sitting in a lukewarm dish.

  2. Wilt the spinach in a small ovenproof dish over a low heat or in the oven if preferred.

The spinach should collapse to a deep glossy green with no watery puddles; if it is very wet, give it a quick squeeze or drain off the excess so the sauce does not turn thin.

  3. Spoon the salsa over the spinach and stir in a little hot sauce.

Stir just enough to distribute the heat and seasoning, keeping the mixture chunky so the salsa still gives you a good texture beneath the eggs.

  4. Make two wells in the mixture and crack in the eggs.

Make the wells deep enough to hold the eggs without the whites spilling across the dish, and crack each egg into a small cup first if you want to avoid shell fragments.

  5. Bake for 8-10 minutes, or until the whites are set and the yolks are cooked to your liking.

Watch for the whites to turn opaque all the way round the edges while the yolks still wobble slightly; if the top is browning too quickly, loosely cover the dish for the last few minutes.
