Why this works

A rich, high-protein savoury egg dish that is low in carbohydrate but high in saturated fat and sodium due to the cheese, butter and soy sauce.

Protein-rich. Eggs and cheddar provide a substantial amount of protein per serving, which supports satiety and muscle maintenance.

Calcium source. Cheddar contributes useful calcium for bone health, though it also raises saturated fat and salt.

Spinach micronutrients. Spinach adds folate, vitamin K and some iron, but the amount is relatively modest per serving.

Method

  1. Beat the eggs in a bowl and set aside.
  2. Melt the butter in a large frying pan over a medium heat and add the spinach, cooking for 1–2 minutes until wilted.
  3. Add cooked rice if using from the pantry; otherwise keep the dish as a soft egg and spinach sauté.
  4. Pour in the eggs and scramble briefly for 2–3 minutes.
  5. Stir through the soy sauce and cheddar cheese until the cheese melts into the rice or egg mixture.
  6. Serve immediately while hot.
