Why this works

A light, protein-rich dessert with very low carbohydrate content, but moderate saturated fat from the butter and eggs.

High-quality protein. Eggs and yoghurt provide complete protein, supporting satiety and muscle maintenance.

Calcium source. Yoghurt and milk contribute calcium for bone health, with some additional phosphorus.

Low in sugar and carbohydrate. This soufflé is naturally very low in sugars and starchy carbohydrate, making it a lighter dessert option.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and butter two ramekins generously.
  2. Separate the eggs, then whisk the yolks with the yoghurt and milk until smooth.
  3. In a clean bowl, whisk the egg whites until they form soft peaks.
  4. Fold the whites gently into the yoghurt base to keep as much air in the mixture as possible.
  5. Divide between the ramekins and bake for 12-14 minutes until risen and golden. Serve immediately.
