Why this works

A moderately energy-dense, protein-containing pudding that is fairly low in carbohydrate but relatively high in saturated fat from the dairy and butter.

Protein from eggs and dairy. Provides a useful amount of complete protein to support satiety and maintenance of muscle tissue.

Calcium and B12. Milk and yoghurt contribute calcium for bone health, plus vitamin B12 and riboflavin from dairy and eggs.

Higher saturated fat. Butter and full-fat dairy can raise the saturated fat content, so portion size matters if heart health is a priority.

Method

  1. Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3) and lightly butter an ovenproof dish.
  2. Rinse the rice briefly in cold water if needed, then tip it into the dish.
  3. Warm the milk with the butter until the butter has melted, then stir in the yoghurt and eggs until smooth.
  4. Pour the mixture over the rice and stir well.
  5. Bake for 50-55 minutes, stirring once or twice, until creamy and tender.
