Why this works

Protein-rich but fairly high in saturated fat and sodium, mainly from the cheese, butter and salsa.

High-quality protein. Eggs and mozzarella provide complete protein to support muscle maintenance and satiety.

Calcium and vitamin B12. Mozzarella and eggs contribute calcium for bone health and vitamin B12 for red blood cell formation and nerve function.

Sodium content. Hot salsa dip can be quite salty, so the dish may be less suitable for those needing a low-sodium diet.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Allow the oven to reach temperature fully before you start assembling, so the eggs begin cooking immediately rather than sitting in a lukewarm dish.

  2. Butter a small ovenproof dish or two ramekins using the butter.

Use the softened butter to coat the base and sides evenly, including the corners or rim, to stop the salsa catching and make serving easier.

  3. Spoon the hot salsa dip into the dish and make two small wells in the salsa.

Press the wells deep enough to cradle the eggs, but keep a little salsa underneath so the whites are supported and do not spread too thinly.

  4. Crack the eggs into the wells, then scatter the mozzarella cheese over the top.

Crack each egg into a small bowl first if you want to avoid broken yolks, then slide them into the wells so they sit neatly in place.

  5. Bake for 10-12 minutes, until the egg whites are just set and the cheese is melted and bubbling.

Start checking at 10 minutes: the whites should look opaque with only a slight wobble in the centre, and the cheese should be blistered rather than browned.

  6. Serve straight away while hot.

Serve at once, as the residual heat will carry on setting the eggs and the texture turns rubbery if left standing.
