Why this works

A protein-rich, moderately energy-dense bake with relatively low carbohydrate content, but it is fairly high in saturated fat and sodium because of the cheese and salsa.

High-quality protein. Eggs, Greek yoghurt and cheese provide all essential amino acids, supporting satiety and muscle maintenance.

Calcium and B vitamins. Cheese and yoghurt contribute calcium for bone health, while eggs add vitamin B12 and selenium.

Sodium and saturated fat. Hot salsa dip and mature cheese can push sodium and saturated fat higher, which is worth noting for heart health.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Spoon the hot salsa dip into a shallow baking dish.
  3. Mix the Greek yoghurt with half the mozzarella and half the extra mature cheese.
  4. Make 4 small wells in the salsa and crack in the eggs.
  5. Dot the yoghurt mixture around the eggs, then scatter over the remaining cheeses and a little black pepper.
  6. Bake for 12-15 minutes until the whites are set and the top is bubbling.
  7. Rest briefly before serving.
