Why this works

A hearty, protein-rich hot pot that is relatively high in fat and sodium, with modest carbohydrate content and some veg-derived fibre.

Good protein contribution. Mince and bacon provide around 25 g protein per serving, supporting satiety and muscle repair.

Sodium is fairly high. The added salt plus bacon make this dish relatively salty, which may be a concern for those monitoring blood pressure.

Some micronutrients from veg and meat. Carrots and onions add beta-carotene and folate, while meat contributes iron and vitamin B12.

Method

  1. Brown the bacon in a large ovenproof pot.
  2. Add the mince and cook until no longer pink.
  3. Stir in the onions and carrots and cook for 5 minutes.
  4. Season with salt and black pepper and add a splash of water.
  5. Cover and bake at 180°C (Fan 160°C, 356°F, Gas Mark 4) for 35-40 minutes until the carrots are tender and the sauce is thick.
  6. Serve hot.
