Why this works
A hearty, energy-dense hash that provides good protein but is high in saturated fat and sodium, so it is best enjoyed occasionally rather than as an everyday meal.
Protein and calcium. Cheddar cheese and bacon contribute a useful amount of protein, while the cheese also adds calcium for bone health.
Potassium and vitamin C. Potatoes and onion provide some potassium, and potatoes add a modest amount of vitamin C, especially if cooked gently.
Salt and saturated fat concern. Bacon and cheddar make this dish relatively high in sodium and saturated fat, which may be less favourable for heart health.
Method
- Bring a pan of salted water to the boil and cook the diced potatoes for 8-10 minutes until just tender. Drain well and leave to steam dry for 2 minutes.
- Meanwhile, heat the olive oil in a large frying pan over a medium heat. Add the bacon and cook until starting to crisp.
- Add the onion and cook for 4-5 minutes until softened and lightly golden.
- Stir in the potatoes and season with black pepper. Fry for 6-8 minutes, turning occasionally, until the potatoes are crisp and the bacon is fully cooked.
- Scatter over the cheese, cover the pan for 1-2 minutes to melt, then serve hot.
