Why this works
A filling, protein-rich hash with useful fibre and micronutrients, but it is also relatively high in fat, saturated fat and sodium due to the bacon and added salt.
High-quality protein. Eggs and bacon provide a substantial amount of protein per serving, which supports satiety and muscle maintenance.
Vitamin A and C. Sweet potato and red bell pepper contribute beta-carotene (vitamin A) and vitamin C, supporting immune function and skin health.
Sodium and saturated fat. Bacon, butter and added salt push this dish towards a higher sodium and saturated fat profile, so it may not suit frequent consumption.
Method
- Peel the sweet potatoes and cut them into small 1.5 cm cubes. Finely slice the onion, dice the bell pepper, and finely chop the garlic and parsley.
- Heat a large frying pan over medium heat and add the bacon. Cook for 4-5 minutes until it begins to crisp and release its fat.
- Add the butter, onion and sweet potato to the pan. Cook for 10 minutes, stirring occasionally, until the onion softens and the sweet potato starts to brown.
- Stir in the bell pepper and garlic. Cook for 5-7 minutes more, until the pepper softens and the sweet potato is tender. Season to taste with salt and black pepper if using.
- Create 2-4 small wells in the hash and crack in the eggs. Cover the pan with a lid and cook for 3-4 minutes, or until the whites are set and the yolks are cooked to your liking.
- Scatter over the parsley and serve immediately.
