Why this works
A rich, energy-dense dessert with useful fruit-derived fibre and vitamin C, but relatively high in saturated fat and sugar from the cream and jam.
Vitamin C. Raspberries, mixed berries and orange contribute vitamin C, which supports immunity and iron absorption.
Fibre. The berries and orange provide moderate fibre, supporting digestive health and helping to blunt the blood sugar rise from the dessert.
Saturated fat. Cream is the main source of fat and contributes a high saturated fat content, so this is best enjoyed as an occasional treat.
Method
- If the berries are large, halve or quarter them. Reserve a few whole raspberries and mixed berries for serving.
- In a bowl, lightly crush the raspberries and mixed berries with the jam and a little finely grated orange zest, just enough to create a juicy ripple.
- Whip the cream until it forms soft peaks, then fold in the orange zest and a small squeeze of orange juice.
- Spoon a layer of the berry mixture into serving glasses, then top with the orange-scented cream.
- Add another spoonful of berries, finish with the remaining cream, and crown with the reserved raspberries and berries.
- Chill for 10 minutes if you have time, then serve cold.
