Why this works

A rich, indulgent dessert that is high in energy, saturated fat and sugar, with a modest protein contribution from yoghurt and eggs.

Calcium and protein. Yoghurt and eggs provide some protein, calcium and phosphorus, supporting bone health and satiety.

Flavanols from chocolate. Chocolate can contribute small amounts of cocoa flavanols, though this depends on the cocoa content of the chocolate used.

High saturated fat and sugar. Double cream, butter, chocolate and caster sugar make this dessert high in saturated fat and added sugars, so it is best enjoyed occasionally.

Method

  1. Melt the chocolate gently and let it cool slightly.
  2. Separate the eggs and whisk the whites until soft peaks form.
  3. Beat the yolks with the yoghurt until smooth, then stir in the cooled chocolate.
  4. Fold in the whisked egg whites in two batches to keep the mixture airy.
  5. Divide between glasses and chill for at least 2 hours.
  6. Serve cold.
