Why this works

A rich, dessert-style pudding that is relatively low in protein and fibre, but high in saturated fat and energy due to the double cream.

Vitamin C from orange juice. Orange juice contributes a modest amount of vitamin C, which supports normal immune function and collagen formation.

Unsaturated fats and minerals from pistachios. Pistachios provide some heart-friendly unsaturated fats, plus magnesium and potassium, though the amount per serving is small.

High saturated fat from cream. Double cream is the main source of saturated fat, so this is best enjoyed as an occasional treat rather than an everyday dessert.

Method

  1. Stir the orange juice into the yoghurt until evenly flavoured.
  2. If the yoghurt seems too loose, chill it for 10 minutes to thicken slightly.
  3. Spoon into serving glasses.
  4. Top with chopped pistachio nuts just before serving.
