Why this works

A protein-rich, savoury dish with moderate calories and fat; the cabbage adds fibre and vitamin C, but bacon keeps sodium and saturated fat relatively high.

Good source of protein. Eggs and bacon provide around 25g protein per serving, supporting satiety and muscle maintenance.

Vitamin C and folate from cabbage and citrus. Cabbage, orange juice and lemon juice add vitamin C, while cabbage contributes folate and other protective plant compounds.

Higher sodium from bacon and mustard. Bacon is the main contributor to sodium, so this dish may be less suitable for a low-salt diet.

Method

  1. Heat a large frying pan over a medium heat and cook the bacon until crisp. Lift out and keep warm, leaving a little of the fat in the pan.
  2. Add the cabbage to the pan with a splash of water and cook for 4-5 minutes, stirring, until just tender and lightly browned at the edges.
  3. In a small bowl, stir together the mustard, orange juice, lemon juice and jam until smooth.
  4. Push the cabbage to one side of the pan and crack in the eggs. Cook to your liking, then spoon a little of the mustard dressing over the cabbage and eggs.
  5. Scatter over the crisp bacon and finish with plenty of black pepper. Serve immediately with a spoonful of yoghurt or vanilla skyr if you like a creamy finish.
