Why this works

A rich, dessert-style pudding with moderate energy and saturated fat, and relatively high sugar from jam and sponge cake.

Vitamin C from lemon. The lemon contributes some vitamin C and citrus flavonoids, though the amount per serving is modest.

Calcium and fat from Krejums. Krejums adds some calcium and protein, but also raises saturated fat, so this is best treated as an occasional dessert.

High added sugar. Jam, sugar and sponge cake make this dish high in free sugars, which may affect blood sugar control and dental health.

Method

  1. Spoon a layer of jam into the base of each glass.
  2. Whisk the krejums with the lemon juice and a little lemon zest until smooth.
  3. Add a layer of the lemon krejums mixture over the jam.
  4. Repeat the layers if the glasses are deep, then chill for 10 minutes before serving.
