Why this works

A rich, energy-dense dessert with high saturated fat and modest sugar, best enjoyed as an occasional treat rather than an everyday option.

High in saturated fat. Butter and krejums contribute a large amount of saturated fat, which can be high in a small serving.

Vitamin C from lemon. The lemon adds a small amount of vitamin C and acidity, though the quantity per serving is modest.

Sugar from jam. Most of the carbohydrate comes from jam, so the dessert is relatively low in fibre and not especially blood-sugar friendly.

Method

  1. Melt the butter gently in a small saucepan over a low heat.
  2. Stir in the krejums, lemon zest and a little lemon juice until smooth.
  3. Spoon a layer of jam into two serving glasses.
  4. Spoon the lemon cream mixture on top of the jam.
  5. Chill for at least 10 minutes before serving, or serve immediately if you prefer a softer texture.
