Why this works

A moderately energy-dense savoury gratin with a good protein contribution from eggs and cheese, but with notable saturated fat and moderate sodium from butter, cheese, ketchup and added salt.

Cabbage provides micronutrients and fibre. Cabbage contributes vitamin C, vitamin K and some folate, plus fibre that supports digestive health.

Eggs and milk add protein and B12. The eggs and dairy supply complete protein, vitamin B12 and selenium, supporting muscle maintenance and normal red blood cell formation.

Saturated fat and sodium are moderate. Butter, cheese, ketchup and the pinch of salt increase saturated fat and sodium, which may be less suitable for a heart-focused diet if portions are large.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Make sure the oven has fully reached temperature before the pan goes in, so the eggs set evenly rather than overcook at the edges.

  2. Melt the butter in an ovenproof pan, add the cabbage, and cook for 8 minutes until softened.

Keep the butter at a gentle sizzle rather than a browning fry; the cabbage should soften and turn glossy, not take on dark, bitter patches.

  3. Stir in the ketchup and cook for 1 minute more.

Stir just until the cabbage is evenly coated and the sauce looks lightly glazed, because letting the ketchup catch on the base can make it taste harsh.

  4. Make 3 wells in the cabbage and crack in the eggs.

Crack each egg into a small cup first, then tip it into the well so the yolks stay intact and do not spill across the cabbage.

  5. Transfer the pan to the oven and bake for 10-12 minutes until the eggs are just set, then serve warm.

Watch for the whites to turn opaque and the yolks to still wobble slightly in the centre; if the tops are firm all the way through, they will be overdone once served.
