Why this works

A simple, relatively light vegetable-and-egg bake with moderate protein, modest carbohydrates, and a small amount of saturated fat from butter and eggs.

Cabbage provides fibre and vitamin C. Cabbage contributes fibre for digestion plus vitamin C and folate, supporting immune function and cell health.

Eggs add high-quality protein and micronutrients. Eggs provide complete protein, along with vitamin B12, vitamin D and choline, which support muscle maintenance and normal nerve function.

Butter and ketchup add saturated fat and sugars. Most of the saturated fat comes from butter, while the ketchup adds a small amount of sugar and sodium.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Let the oven come fully up to temperature before the dish goes in, so the eggs start setting promptly rather than sitting in a lukewarm oven.

  2. Cook the cabbage in butter until softened, then spread it in a small baking dish.

Keep the heat at medium rather than high; the cabbage should turn glossy and tender without browning too quickly or drying out, and a little colour at the edges is ideal.

  3. Make 3 wells in the cabbage and crack an egg into each one.

Make each well deep enough to cradle the egg white so it stays in place; if the cabbage is too loose, press it down lightly with the back of a spoon first.

  4. Bake for 10-12 minutes, until the eggs are set to your liking.

Check at the 10-minute mark for set whites with a slight wobble at the yolks, and avoid overbaking or the eggs will turn chalky and rubbery.

  5. Finish with a small drizzle of ketchup before serving.

Use only a small drizzle so the ketchup adds sharpness without flooding the surface, otherwise it can dominate the savoury cabbage and egg flavour.
