Why this works

A modest-calorie, protein-containing skillet with good fibre from cabbage, but fairly high in saturated fat and sodium for the portion size.

Cabbage fibre and vitamin C. Cabbage contributes fibre, vitamin C and folate, supporting digestion and immune function.

Egg nutrients. Eggs provide high-quality protein, vitamin B12, selenium and choline for muscle and nerve health.

Saturated fat and sodium to watch. Butter and added salt raise saturated fat and sodium, which may be less suitable for heart-healthy eating if eaten frequently.

Method

  1. Melt the butter in a large frying pan over a medium heat.

Keep the butter moving in the pan so the milk solids do not brown too quickly; you want a foamy, even melt rather than any nutty colour at this stage.

  2. Add the cabbage and cook for 8-10 minutes, stirring often, until softened and lightly golden.

Let the cabbage sit against the hot surface for short spells so it can take on a little colour, but stir before any edges blacken or it will turn bitter.

  3. Stir in the ketchup and a splash of water if needed, then cook for 1 minute.

Stir just long enough for the sauce to turn glossy and coat the cabbage in a thin film; if it looks stiff, add only a teaspoon or two of water at a time.

  4. Make 4 small wells in the cabbage and crack in the eggs.

Make the wells with the back of a spoon and widen them slightly so each egg has room to settle without the whites spreading over the cabbage.

  5. Cover and cook for 4-6 minutes until the eggs are just set to your liking, then serve hot.

Keep the lid on only until the whites are opaque and the yolks still wobble slightly in the centre; remove the pan from the heat a touch early, as residual heat will finish them.
