Why this works

Moderate-calorie, protein-containing side dish with some fibre, but relatively high in salt and saturated fat due to butter and added salt.

Cabbage provides fibre and vitamin C. Cabbage contributes gut-supportive fibre plus vitamin C and some folate, helping overall micronutrient intake.

Eggs add complete protein. Eggs supply high-quality protein and useful nutrients such as vitamin B12 and selenium.

Butter and added salt raise concern. Butter increases saturated fat, and the added salt can push sodium higher than ideal for regular use.

Method

  1. Thinly slice the cabbage.
  2. Melt the butter in a large frying pan over a medium heat and cook the cabbage for 6-8 minutes, stirring often, until softened and lightly golden.
  3. Push the cabbage to one side of the pan and crack in the eggs, frying them to your liking.
  4. Season the eggs and cabbage with salt and black pepper if using.
  5. Serve the eggs over the buttery cabbage with ketchup on the side or drizzled over the top.
