Why this works
A moderate-calorie, protein-containing vegetable and egg dish with some saturated fat and added sugar from ketchup.
Cabbage. Provides fibre plus vitamin C and folate, supporting digestive health and normal immune function.
Eggs. Contribute high-quality protein, vitamin B12 and choline, which support muscle maintenance and brain function.
Ketchup and butter. Ketchup adds added sugar and sodium, while butter increases saturated fat.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
Let the oven fully come up to temperature before the pan goes in, so the eggs start setting immediately rather than sitting in a lukewarm oven and overcooking the cabbage.
- Melt the butter in an ovenproof frying pan over a medium heat and add the shredded cabbage.
Wait until the butter has stopped foaming and the cabbage edges are just taking on colour, as that means the heat is right for sweetening the cabbage without catching the dairy solids.
- Cook for 6-8 minutes until beginning to soften, then stir through the ketchup and a splash of water if needed to loosen the sauce.
Keep the cabbage moving often enough that the ketchup coats it evenly, and add only a little water at a time so the mixture stays glossy rather than turning watery.
- Make 4 small wells in the cabbage and crack in the eggs.
Use the back of a spoon to deepen each well and keep the bottoms intact, which helps stop the eggs from sliding together and spreading the whites too thinly.
- Transfer the pan to the oven and bake for 8-10 minutes, until the egg whites are set and the yolks are just cooked to your liking.
Check at the 8-minute mark for set whites with a slight wobble around the yolks; if the tops are browning too fast, loosely cover the pan with foil for the last few minutes.
- Serve hot straight from the pan.
Rest the pan for a minute or two off the heat so the bubbling calms down, which makes serving easier and helps the yolks stay luxuriously soft.
