Why this works

Moderate in energy and protein, but relatively high in sodium and fat due to ham and mayonnaise.

Good protein content. Eggs and ham provide a solid amount of protein, which supports satiety and muscle maintenance.

Sodium concern. Ham and tomato sauce contribute a notable sodium load, so this dish may be less suitable for those monitoring blood pressure.

Micronutrients from eggs and spring onions. Eggs provide vitamin B12 and choline, while spring onions add small amounts of vitamin C and antioxidants.

Method

  1. Boil the eggs for 8–9 minutes, then cool, peel and chop them.
  2. Mix the chopped eggs with mayonnaise and a little tomato sauce.
  3. Spread the mixture over half the crispbakes.
  4. Top with ham and sandwich with the remaining crispbakes.
  5. Serve straight away for maximum crunch.
