Why this works

A protein-rich, moderately energy-dense dish with higher saturated fat and relatively low fibre, best suited to a filling breakfast or light meal.

High-quality protein. Eggs, milk and cheese provide a substantial amount of complete protein, supporting satiety and muscle maintenance.

Calcium source. Cheese and milk contribute useful calcium for bone health, though the amount of saturated fat is also notable.

Low fibre content. With only a small amount of bread and no fruit, vegetables or whole grains, this dish is not especially fibre-rich.

Method

  1. Whisk together the eggs and milk to make a smooth batter, then pour thinly into a lightly oiled pan to make crêpes.
  2. Cook each crêpe for 1-2 minutes per side and keep warm.
  3. Lightly scramble a couple of eggs in a clean pan until just set, then stir in the cheese so it melts.
  4. Spoon the egg and cheese filling along each crêpe and roll up.
  5. Serve warm with extra cheese scattered over the top if you like.
