Why this works
A filling, high-energy meal that is high in saturated fat and sodium, with moderate protein and carbohydrate from the potatoes.
Potassium from potatoes. Potatoes provide potassium, which supports normal blood pressure and muscle function.
Calcium and protein from cheese. Cheese contributes protein and calcium for bone health, but also adds significant saturated fat and salt.
High sodium load. Chorizo, cheese, brown sauce and the added salt make this dish very high in sodium, which is worth noting for blood pressure.
Method
- Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and prick the potatoes all over. Bake for 60-70 minutes until the skins are crisp and the centres are soft.
- Meanwhile, slice the chorizo sausages and fry in a dry pan over a medium heat until the fat renders and the pieces are lightly crisp.
- Split the baked potatoes open and fluff up the insides with a fork. Add the chorizo and a generous handful of grated cheese, then season with salt and black pepper if using.
- Return the filled potatoes to the oven for 5-10 minutes, until the cheese has melted.
- Serve hot with brown sauce drizzled over the top or on the side.
