Why this works

Energy-dense savoury pastry snack that is high in fat and saturated fat, with moderate protein and relatively high salt from chorizo and cheese.

Saturated fat and salt. Chorizo, cheese and mayonnaise make this recipe notably high in saturated fat and sodium, so it is best enjoyed occasionally rather than as an everyday snack.

Protein and calcium. Cheese, egg and chorizo provide a useful amount of protein, and the cheese contributes calcium for bone health.

Refined carbs. Puff pastry and plain flour add mainly refined carbohydrate with very little fibre, so the filling does little to improve fullness per calorie.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a baking tray with baking parchment.
  2. Remove the skins from the chorizo sausages and finely chop or crumble the meat into a bowl.
  3. Grate the cheese and add it to the chorizo with the mayonnaise. Mix until well combined.
  4. Unroll the puff pastry on a lightly floured surface and spread the chorizo mixture evenly over the surface, leaving a 1 cm border along one long edge.
  5. Roll the pastry up tightly from the opposite long edge into a log. Brush the border with beaten egg to seal.
  6. Slice the log into 12 even rounds and place them cut-side up on the prepared tray, leaving a little space between each.
  7. Brush the tops with the remaining beaten egg and bake for 18–22 minutes, until puffed and deeply golden.
  8. Leave to cool for a few minutes before serving warm.
