Why this works

Moderate-energy comfort food with some protein and fibre, but relatively high in saturated fat and likely salt from the cheese and sauce.

Potassium from potatoes. Potatoes provide useful potassium, which supports normal blood pressure and muscle function.

Calcium and protein from cheese. Cheese contributes calcium for bone health and a moderate amount of protein, but also raises saturated fat.

Tomato nutrients. Tinned tomatoes add vitamin C, potassium and lycopene, a beneficial antioxidant.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Scrub the potatoes and prick them all over with a fork.
  3. Bake directly on the oven shelf for about 50 minutes until tender.
  4. Meanwhile, warm the tinned tomatoes in a pan and stir in a little sauce to make a simple topping.
  5. Split the potatoes open and fluff the insides with a fork.
  6. Spoon over the tomato mixture and top generously with cheese.
  7. Return to the oven for 5 minutes, or until the cheese has melted.
