Why this works

A moderate-carbohydrate, moderate-calorie side dish with some fibre and a modest amount of protein, but it is relatively starchy and not especially high in vegetables or lean protein.

Potassium from potato and onion. The mashed potatoes and onions contribute potassium, which supports normal blood pressure and muscle function.

Some fibre and plant nutrients. Onions and applesauce provide a small amount of fibre plus polyphenols, though the recipe is not especially fibre-rich overall.

Sodium and added sugar to watch. Teriyaki sauce, fried onion and added sugar increase sodium and free sugar, so portions matter if you are watching blood pressure or blood glucose.

Method

  1. Cook the rice until tender and set aside.
  2. Slice the onions and cook them slowly in a pan until soft and lightly browned.
  3. Stir in the apple sauce and white sugar, then cook for 1-2 minutes until glossy.
  4. Add the rice and toss well so every grain is coated.
  5. Serve warm as a side dish or a light bowl meal.
