Why this works

Rich, energy-dense toastie with substantial saturated fat and salt; best enjoyed occasionally rather than as an everyday meal.

Calcium from cheddar. Cheddar provides a useful amount of calcium for bone health, but also contributes a lot of saturated fat and salt.

Sodium from cheese, mustard and pickles. Pickles, mustard and cheddar push the salt content up, so this is not a low-sodium choice.

Wholemeal bread could improve fibre. As written, the recipe is fairly low in fibre; using higher-fibre bread would improve satiety and gut support.

Method

  1. Finely chop the pickles and mix them with the mustard and mayonnaise in a small bowl.
  2. Butter one side of each slice of bread, then spread the pickle mixture on the unbuttered side and top with grated cheddar.
  3. Close the sandwiches and cook in a hot frying pan over medium heat for 3-4 minutes per side until golden and the cheese has melted.
  4. Press gently with a spatula while cooking for an even crust.
  5. Slice in half and serve hot.
