Why this works

Energy-dense and high in saturated fat and salt, with a useful protein contribution from cheddar.

Calcium from cheese. Cheddar provides a good amount of calcium for bone health, though it is also high in saturated fat.

Sodium from pickles and mustard. The pickles and mustard add flavour but also contribute a notable amount of salt.

Protein-rich. The cheddar makes this a fairly high-protein snack or light meal.

Method

  1. Butter one side of each slice of bread if using bread from the pantry; otherwise cook the filling as a melted cheese skillet mix.
  2. Spread the mustard over the unbuttered side of one slice, then layer on the cheddar cheese and sliced pickles.
  3. Top with the second slice, buttered side facing out.
  4. Cook in a frying pan over a medium heat for 3–4 minutes per side until golden and the cheese has melted.
  5. Slice and serve straight away.
