Why this works
A fairly energy-dense side dish with moderate protein and fibre, but relatively high saturated fat and sodium from the cheese, butter, pickles and added salt.
Potassium and vitamin C. Potatoes contribute potassium and some vitamin C, supporting normal nerve and muscle function.
Calcium and protein. Cheddar and yoghurt add calcium and a useful amount of protein for satiety and bone health.
Sodium concern. Pickles, mustard, cheese and added salt can push the sodium content up, so this is best enjoyed in moderation.
Method
- Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and bake the potatoes until fluffy and tender.
- Mix the yoghurt, mustard and chopped pickles together, then season with salt and black pepper.
- Split the hot potatoes open and fluff up the centres with a fork.
- Spoon in the yoghurt mixture and return to the oven for 5 minutes if you want them warmed through.
- Serve immediately.
