Why this works

A simple, energy-dense rice dish that is moderate in fat and low in protein and fibre, with sodium likely elevated from soy sauce and added salt.

Vitamin C from pepper. The large pepper contributes vitamin C and some carotenoids, supporting immune function and antioxidant intake.

Sodium concern. Soy sauce plus added salt can make this dish relatively high in sodium, which is worth watching if you are limiting salt.

Low protein content. With rice and pepper as the main ingredients, this meal is not a strong source of protein unless served with beans, egg, tofu, chicken or fish.

Method

  1. Cook the rice and leave it to cool slightly if possible.
  2. Heat the oil in a wok or frying pan over a high heat.
  3. Add the pepper and stir-fry for 30 seconds until fragrant.
  4. Add the rice and toss well to coat in the oil and pepper.
  5. Splash in the soy sauce and season with salt and black pepper if needed.
  6. Stir-fry for 2–3 minutes until piping hot, then serve immediately.
